We have a lot of pizza recipes but this one is our original, bog standard, go-to recipe when we want to quickly cook our takeaway favourite. Trust us when we say there's not much better than a homemade pizza! We'll show you how to make a base from scratch and leave it to you to choose the toppings. Remember cheese. Lots of cheese.
Mix the yeast with a little of the water to form a smooth paste. Sieve the flour into a bowl and add the salt and oil. Pour and mix in the yeast, then the water a little at a time until you have a soft dough.
Knead for 5 minutes then cover and leave in a warm place for 45 minutes or so.
Peel and finely chop the onion and garlic. Fry it in a pan with a splash of olive oil for 5 minutes until soft and sweet. Splash in the wine and reduce by at half then add the tomato passata, basil and seasoning. Simmer for 20-30 minutes until the sauce has a spreadable consistency then allow to cool.
Preheat the oven as high as it will go.
Take half of the dough mix and roll out to the thickness of a pound coin. Spread over the tomato sauce, right to the edges and scatter with cheese.
Arrange the topping of choice over the cheese and cook on a baking tray for about 10 minutes. The edges should be crispy and the cheesy topping melted and golden. Serves 3-4
