Oven Baked Polenta Chips

Bore off potato! These scrumptious chips are crispy on the outside and soft in the middle. Did I mention they are HEALTHY too?
- 200 g polenta
- few sprigs fresh thyme or rosemary
- 1 l water or veg stock
Add water to saucepan with a pinch of salt
Bring to a boil then slowly add all the polenta, stirring continuously
Continue to cook for 15 minutes - stirring every few minutes until polenta is fully cooked and coming away from the sides of the pan
Let Polenta Cool
Pour the cooked polenta into a baking dish to let cool. This will take several hours
Preheat Oven And Prepare Chips
Once the polenta is fully cooled - preheat oven to 200C
Flip baking dish upside down to remove polenta block and cut into thick chips
Once you have you cut your chips - arrange onto a baking tray lined with foil
Lightly coat chips with olive oil, season with salt and pepper and sprinkle with fresh rosemary
Bake for 20-25 minutes until chips are golden
