BEEF MADRAS

STEP-BY-STEP-GUIDE

MAKE THE SPICE PASTE

Peel and finely chop (or blend) the onion, garlic, ginger and chilli.  Combine the resulting paste with the pepper, dried chilli, coriander, fennel seeds and squeeze over the juice of the lemon

START COOKING

Heat the oil in a saucepan and fry the paste until fragrant. Add the beef and brown on all sides. Add the tomato puree and the desiccated coconut and coat the beef.

ADD EVERYTHING

Splash a little of the stock into the saucepan to deglaze, then add the coconut milk and the rest of the stock. Dice the tomato and throw it into the pan

SIMMER AND SERVE!

Cover the saucepan and simmer for 1 hour, until the beef is tender and the sauce has thickened. Spoon it into bowls and serve with a load of different breads! Serves 6
