Recipe: World Class Nyc Pizza
The most bad ass pizza you've ever seen... In my opinion!!
Using an amazing dough from: http://www.bonappetit.com/recipe/no-knead-pizza-dough
- any other toppings
- 4 garlic cloves
- 0.5 tsp active dry yeast
- 4 tsp fine sea salt
- 50 ml olive oil
- 1 kg all purpose flour
- 2 cans tomatoes
- 3 cup water
The Dough - Part 1
Whisk flour, salt and yeast in a bowl. Whilst stirring, gradually add the water - stir until well incorporated. Mix dough gently with your hands to bring it together and form a rough ball. Transfer to a clean bowl, cover with cling film and let dough rest until it's doubled in size (18 hours?).
The Dough - Part 2
Transfer dough to a floured work surface and gently shape into a rectangle. Divide into 6 even portions. Working with one portion at a time, gather 4 corners to create 4 folds. Turn seam side down and mould gently into a ball. Dust dough with flour and set aside. Repeat with other portions. Let the dough rest for another hour covered with a damp tea towel or cling film.
Drain tomatoes from the juice (save that for bloody mary mix!). Completely crush the tomatoes with your hands, breaking up any large pieces. Add crushed garlic, olive oil and season with salt and pepper.
Let's Make Pizza
Pre-heat your oven to the hottest setting.
Flour a work surface and get one of your dough balls, gently shape your dough into whatever shape pizza you like, making it as thin as possible.
Transfer the dough to a well oiled baking tray.
Spread your tomatoes on thinly, followed by your mozzarella and Parmesan. Now is also the time to add any toppings you want to.
Final thing before it goes into the oven is a drizzle of olive oil over the pizza to crisp up the crust.
Put your pizza into the oven for roughly 10-12 minutes until crispy and the cheese is all melted.... ENJOY!!
