Recipe: Gf Vanilla Bean Donuts
These fluffy, soft, vanilla-bean-y donuts are not only DELICIOUS, much better for you AND simple-- BUT...you can dress them up any way you want!
- 1 3/4 cup Gluten Free Flour Blend ( Equal parts Coconut flour, Rice Flour, Oat Flour and Tapioca Starch)
- 2 tsp Baking Powder
- 1 tsp Sea Salt
- 1/4 tsp Ground Nutmeg
- 1/2 - 2/3 cup Organic Coconut Sugar (adjust to preference of sweetness)
- 3/4 cup Almond Milk (or other non-dairy milk)
- 1 tbsp Apple Cider Vinegar (or white vinegar OR lemon juice)
- 2 tbsp Coconut Oil, Melted
- 2 tbsp White chocolate, Melted OR a Mild Nut Butter, Softened
- 2 Eggs Room temperature, lightly whisked -- for Vegan alternative use Ener-G Egg Replacer!
- 1 tbsp Vanilla Bean Paste or 1 Vanilla Bean
Preheat And Get Ready To Party
Preheat oven to 400 degrees F. Grease/spray at least 2 donut pans and set aside (I use the Wilton brand pans and you can just use 1 and wash in between batches)
Wet Plus Dry = Donut Time!
To make your vegan buttermilk, take the almond milk and dump in the vinegar or lemon juice. Let sit until it coagulates slightly (weird, I know) -- then it's ready! In the mean time...mix all your dry ingredients in a large bowl and all your WET room temperature ingredients in another. When a few minutes has passed add the 'buttermilk' to the wet ingredients and mix thoroughly. Dump into your dry ingredients and mix well until you have a slightly sticky batter!
It's Piping Time!
Scoop batter into a pastry bag or large ziploc bag, cut the tip off and pip your donuts into the pan ensuring it is no more than 2/3 of the way full -- with a wet finger pat down the peaks on the donuts left by the piping bag so your donuts are flat and bake up nicely!
Bake Bake Bake!
Bake each batch of donuts for 10 - 12 minutes making sure to cool the pan off completely before you re-use it or use multiple pans. Gently turn the pan upside down and gently agitate it and the donuts should fall right out -- put them on a wire rack to cool!
Donut Be Glaz-Y!
If you want a QUICK vegan glaze -- while to donuts are cooling -- prepare this:
1/4 cup almond or coconut milk
1 teaspoon vanilla extract
1 tablespoon coconut oil
2 cups confectioner's sugar, sifted
Heat the almond milk in a small saucepan for 2-3 minutes until it begins to bubble. Add in coconut oil until melted. Add in all additional ingredients INCLUDING some colouring if you want to use it -- whisk together quickly until it's nice and smooth.
Glaze It Up!
Once your donuts are cooled and glaze is ready to go you can begin to dip the top half of the donut (the one that is facing up while baking them) in the glaze. Use a shallow bowl so you can dip more easily! Decorate with any bits and bobs you'd like! You can do two rounds of dipping for a very thick glaze. The glaze will set slightly hard -- so decorate with toppings before that happens!
