Recipe: 'crawfish' Boil

'CRAWFISH' BOIL

The crawfish boil we experienced in New Orleans at the house of Jordon and her family was easily in the top 5 most social food experiences ever... and that's saying a lot... there have been so many. This is my version... taking all the tips that Shaggy (The Crawfish King) shared with us and using the flavours in the broth that he did (minus the sausage to keep it meat-free and fit for pescetarians). If you can get fresh, live crawfish then absolutely do, they are phenomenal... but if they're tricky to get hold where you live (like they are in the UK) then use shrimp.

Ingredients

  • 2 sticks of celery
  • 400 g small waxy potatoes
  • 200 g button mushrooms
  • 4 cloves of garlic, peeled
  • 1 orange
  • 1 bunch of fresh thyme
  • 4 tbsp creole seasoning
  • 1 tbsp cayenne pepper
  • 1/2 tsp ground clove
  • 2 tbsp salt
  • 2 kg shrimp, in their shell
  • 6 portions of frozen corn on the cob
Wash and prep the veg

Wash and roughly chop the celery, quarter the potatoes if they are too large, halve and wash/scrub the mushrooms to remove any dirt or grit and slice the orange into wedges.

Boil up the broth

Place into a huge saucepan with the spices, whole and peeled cloves of garlic,bunch of fresh thyme, salt and 4 litres of water. Heat to a boil and cook for 15 minutes. Don't worry if it tastes overly salty and spicy... that's what you're looking for, you don't really drink the broth it just imparts flavour to everything else!

Refresh the crawfish/shrimp

Refresh The Crawfish/shrimp

Rinse the crawfish several times by placing them into a bucket and filling with cold water, leaving them for a couple of minutes then draining the water and refreshing. Repeat 2-3 times. (Less necessary if using sea shrimp like we are.) Dump in the crawfish and bring back to a simmer as quickly as possible.

Simmer for 3-4 minutes, then turn off the heat and add the frozen corn so they cool the mixture down but cook in the residual heat. Leave the mixture to steep for 10 minutes, the crawfish/shrimp will take on more flavour.

Scoop and serve

Scoop all the bits out and transfer to large serving platter. Serve with friends or family and let everybody get stuck in! Serves 6
