Recipe: World's Healthiest Blondies

WORLD'S HEALTHIEST BLONDIES

One of my most treasured recipes -- these blondies are gluten free, guilt free and absolutely DELICIOUS! Moist and studded with chocolate chips? YAHOOO!!!

Ingredients

  • 1 cup Oat Flour
  • 1/2 cup Almond Flour
  • 1 tsp Sea Salt
  • 2/3 cup Organic Coconut Sugar
  • 1/2 - 2/3 cup Dark Chocolate Chips
  • 2 Units Large Eggs, Room Temperature
  • 1/2 cup Greek Yogurty, Room Temperature
  • 1/3 cup Coconut oil, Melted
  • 1 tsp Pure Vanilla Extract (or Vanilla Bean Paste!)
PREPARE ZEE TOOLS!

Step 1

Prepare Zee Tools!

Preheat oven to 350 F and Line an 8x8 pan with parchment paper so there is an overhang. This will help you lift 'em outta the pan later! Set aside.

MIX AND STIR!

Mix And Stir!

In a large mixing bowl combine your melted coconut oil, room temperature yogurt, eggs and vanilla. Whisk until it begins to form a cohesive and thick liquid. Dump in the coconut sugar and whisk until fully combined.

BLONDIE TIME!

Blondie Time!

Add in your flours and sea salt and combine gently -- mixing until you have a cohesive liquid. Add in chocolate chips and stir gently. The mixture will be a touch runny and not very smooth due to the flours -- so don't panic! Dump it in your pan and spread as evenly as possible.

BAKE BAKE BAKE!

Step 4

Bake Bake Bake!

Bake your blondies for 20 - 25 minutes or until a toothpick inserted into the centre comes out clean with a few moist crumbs. Allow to cool in the pan for 5 minutes and lift out of the pan to finish cooling completely. Cut into 16 squares and serve! With ice cream if you're feeling fancy. Otherwise keep the leftovers in an airtight container for 2-3 days.
