Community Recipe: Easy Quinoa Salad

Easy, flavorful, and healthy quinoa salad. Great with your leftover food.


  • ¼ chopped cucumber
  • ¼ cup Raisin
  • ½ cup water
  • ¼ cup Quinoa
  • Pinch of salt, pepper, paprika
  • ⅛ cup sliced almonds
  • 1 tbsp olive oil
  • 2 cloves garlic
  • ¼ cup Basil leaves
  • left over fish or pork chopped into small pieces

Step 1


Blend together basil, oil, garlic and seasoning. Season according to taste

Step 2


Pour quinoa in a pot with the boiling water and seasonings. Cook on medium heat until liquid is absorbed. Set aside and cover for 15 mins. Fluff with fork and the pesto and the rest of the ingredients. (You might not want to add all the pesto, depending on how strong you want the garlic basil taste to be. I put in about 1 tbsp) You can use left over chicken, fish, pork, spam whatever you want and any kind of nut or fruit Chill covered for at least 3 hours. I served mine with a dollop of Sweet korean chili paste and it was amazing. I imagine Sriracha would be great too! Enjoy!
