Recipe: Jack Daniels Sub

If this doesn't make you drool, we don't know what will!! As we continue to explore the USA in our SORTED Eats series, we stumble across the ever popular sub. The Italian sub sandwich has been adopted by the United States and our version is brimming with Jack Daniel's marinated chicken and monterey jack cheese then toasted to a melt.... YUM!

Ingredients

Marinade

  • 3 cloves of garlic
  • 2 peeled red onions
  • a glug olive oil
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • a few spalshes of Tabasco
  • 60 ml Jack Daniels
  • 150 ml tomato ketchup

Filling

  • 4 whole chicken breasts
  • 8 rashers of streaky bacon
  • 4 6-inch subs
  • a bowl of salad, to serve

Chop the garlic finely and slice the red onion. Heat the oil and gently fry the onion and garlic until soft and sweet, then remove from the heat. Add the paprika, Worcestershire sauce, brown sugar, Tabasco, tomato ketchup and Jack Daniels to the onions. Give it a good stir. Take half of Jack Daniels sauce and mix it with the chicken. Leave in the fridge to marinate for at least an hour or preferably overnight.

Preheat an oven to 180ºC. Stick the chicken onto a baking tray and bake for 20 minutes. Tear the chicken into thin strips as soon as its cool enough to handle. Heat the remaining Jack Daniels sauce and chuck in the torn chicken. Lay out the bacon on a tray and cook in the oven for 12-15 minutes until crispy.

Preheat a grill of griddle pan to medium-high. Halve the subs and lay out on a grill tray. toast them under the grill before laying out the cheese on one half. Toast again until the cheese begins to bubble. spoon the chicken onto the toasted bread and top with the bacon. Fold over the cheesy side of the bread and serve up your subs with salad or slaw!
