RAINBOW SALAD

Salads don't have to be boring... we've been advised that to come up with the best healhty salads with loads of vitamins and nutrients aim to eat a variety of colours. This awesome salad does just that.

INGREDIENTS

STEP-BY-STEP-GUIDE

CHICORY

Slice most of the chicory leaves into bite-sized pieces.

ORANGE

Peel the orange with a knife to get rid of all the pith and cut out segments with a sharp knife, catching any dripping juice in a bowl.

TOMS AND ONIONS

Halve the cherry tomatoes and finely slice the spring onions.

CONSTRUCT

Lay a bed of the rocket leaves and chicory over a serving plate and scatter the spring onions, orange segments and tomatoes on top. Dot the salad with blobs of goats cheese and walnut halves. Whisk the olive oil with the orange juice and add plenty of salt and pepper. Dribble as much of that over the salad as you prefer and serve with a few cheese straws.
