Recipe: Rainbow Salad


Salads don't have to be boring... we've been advised that to come up with the best healhty salads with loads of vitamins and nutrients aim to eat a variety of colours. This awesome salad does just that.


  • 1 head of red chicory
  • 1 orange
  • 1 handful of fresh rocket leaves
  • 7 cherry tomatoes
  • 2 spring onions
  • 1 handful of walnut halves
  • 1 chunk of soft goats cheese
  • 1 shot of olive oil

Step 1


Slice most of the chicory leaves into bite-sized pieces.

Peel the orange with a knife to get rid of all the pith and cut out segments with a sharp knife, catching any dripping juice in a bowl.

Halve the cherry tomatoes and finely slice the spring onions.


Step 4


Lay a bed of the rocket leaves and chicory over a serving plate and scatter the spring onions, orange segments and tomatoes on top. Dot the salad with blobs of goats cheese and walnut halves. Whisk the olive oil with the orange juice and add plenty of salt and pepper. Dribble as much of that over the salad as you prefer and serve with a few cheese straws.



Mulberries! Recently, I bought a few punnets of mulberries on sale and I tried using them in my salad and they worked surprisingly well. For the dressing, I used equal parts olive oil and apple cider vinegar, squished mulberries and the juices from them, squished tomatoes and their juices, honey, salt, and black pepper. It's really delicious!
