Recipe: Bagels


You asked for it, we did it. These homemade bagels have some deliciously chewy centres encased in a crisp outer shell. Serve them with some cream cheese, smoked salmon or with a sweet filling - they're super versatile!



  • 300 ml warm water
  • 7 g dried yeast
  • 500 g strong white bread flour
  • 2 tbsp honey
  • 1 tbsp salt
  • 1 egg white


  • 1 handful fresh chives
  • 1 tbsp carraway seeds
  • 1 tbsp poppy seeds
  • 1 tbsp sesame seeds
  • 1 tsp cinnamon
  • 1 tsp sugar

Dissolve the yeast in the water. Combine the flour, salt, honey and yeasty water in a bowl, then knead on a work surface for 5-10 minutes until you have a soft dough… a dough hooker in a mixer is perfect for this. Leave the dough to prove for an hour in a warm place under a cloth.

Add the flavouring you want… either cinnamon and sugar, finely chopped chives or the seeds… and knead into the risen dough to equally distribute. Divide the dough into 12 equal pieces on a floured surface then flatten each bit into a round flattish disc approximately 2cm deep.

Cut a small hole in the centre with a small cutter and spin the dough around the cutter or your finger to create the bagel shape. Lay the rings on a sheet of baking paper on a tray and leave to prove again for 30-45 minutes.


Step 4


Heat a large pan of water to the boil and preheat an oven to 180°C. Boil the bagels one or two at a time for 1 minute on each side before scooping them out, drying on a tea towel and returning to the lined baking tray.

Brush with beaten egg white and bake for 25 minutes until golden. Allow to cool, then serve however you prefer. They are also great toasted! Makes 12
