Recipe: Banana And Date Cake

Ben teamed up with Si from GCN to create a perfect post race treat, complete with bananas and coconut oil to replenish your energy! We're also using date syrup to reduce the amount of refined sugar! Win :)
Ingredients
- 120 g cold coconut oil
- 90 g light brown sugar
- 120 ml date syrup
- 2 eggs
- 2 bananas, peeled and mashed
- 275 g plain flour
- 1 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp salt
- 100 g chopped walnuts
Step 1
Make The Cake Batter
Whisk the coconut oil, sugar, syrup, eggs and mashed banana together in a bowl. Fold in flour, raising agent, ginger and salt. Stir through chopped nuts.
Step 2
Bake!
Transfer to lined square 20cm x 20cm cake tin. Bake at 175 degrees C for 25 mins.

Serve up after your bike ride, or just for a treat any time ;) Serves 8

P.S If you can’t get hold of any date syrup, blitz up 60g of dried dates and 60ml of honey instead!
