Recipe: Chamomile-Infused Jasmine Rice With Seared Salmon


We had requests asking us to take a look at whether our diets could improve sleep. So we teamed up with a nutritionalist and tackled exactly that. Pretty much all the components in this dish are known to assist is some form or other. Putting them together creates not just an awesome recipe, but something that might just help!


Sleepy Salmon Dish

  • 1 cup Jasmine rice
  • 2 cups water
  • 1 lime
  • 1 little gem lettuce
  • 1 papaya
  • 2 spring onions
  • 1 splash of rice wine vinegar
  • 1 drizzle of toasted sesame oil
  • 1 camomile teabag
  • 1 pinch of salt
Cook the rice

Cook The Rice

Wash the rice in cold running water. Place the rice, measured water, salt and teabag into a saucepan and heat to a simmer. Simmer gently for 10 minutes until all the water as been absorbed, then place a lid on the rice and turn the heat off, leaving it to cook for a further 2-3 minutes.

Season the salmon and fry in a pan over a medium heat, skin side down, for 5-6 minutes until the skin is crispy and the fish is 75% cooked through. Turn the salmon over when the skin is crispy and squeeze in the juice of the lime to finish the cooking.

Grill the lettuce

Wash the lettuce, slice in half lengthwise and brush the cut side with a tiny amount of sesame oil. Cook on a griddle, flat side down whilst the salmon is cooking.

Peel and dice the papaya, then toss in a splash of rice wine vinegar and a drizzle of oil. Crack in plenty of black pepper and stir through the finely sliced spring onion.


Step 5


Serve the grilled lettuce as a base to the cooked salmon, with the papaya salad and Jasamine rice on the side.
