We'd never even heard about this until it was shared with us. It's a delicious milkshake/smoothie from Mexico that includes making your own rice milk... the original recipe from Pigadimar on sortedfood.

90 g almond flakes
200 g raw fragrant rice
800 ml water
1 cinnamon stick
450 ml milk powder
1 tbsp condensed milk
1 tbsp honey
1 tsp vanilla extract
1/4 tsp ground cinnamon
1 pinch of salt
100 ml double cream
Make A Rice And Almond Milk
Pour the rice, almond flakes and water into a large bowl.
Chuck in the cinnamon stick and keep in the fridge for 8-12 hours.
Remove the mixture from the fridge and blend until as smooth as possible.
Strain The Milk
Strain the mixture through a piece of muslin cloth, or a very fine sieve.
Freeze The Milk In Cubes
Pour the strained milk into ice cube trays and freeze.
Blitz Up The Drink
In a blender, combine the ice cubes with the regular milk, condensed milk, honey, vanilla extract, cinnamon and salt.
Blend until smooth, with a drinking consistency.
Decorate To Serve
Whisk the double cream in a bowl until it reaches soft peaks.
Transfer to a piping bag with a star nozzle.
Pipe the whipped cream over the top of the drink and drizzle with caramel sauce.
