Recipe: BUBBLE AND SQUEAK
We have this if we have veg leftover from sunday roast, its the only way i will eat sprouts! crispy, juicy potatoes and vegetables but is creamy at the same time, brilliant with a fried egg or cold meats and salad!
- 1 Large leek (sliced)
- 1 Large onion (diced)
- 200 g Leftover vegetables
- 200 g leftover potatoes (roasted, boiled, mashed, it doesnt matter!)
- 50 g Butter
- 1 pinch Salt and pepper
soften the leek and onion, then add the vegetables, salt and pepper.
HACK IT UP!
if you are using boiled or roasted potatoes hack them up. Add the butter to the pan tossing it through the veg (here you can add herbs if you wish, rosemary works well) then add the potatoes.
THE SECRET IS CRISPING!
as you stir, mash up the potatoes and veggies together, then leave to get crisp on the bottom, stir that veggie crispness through and repeat the process a couple more times.
serve hot, is nice with salad and cold meats or with a fried egg on top, or just as it is with some of your favourite sauce!
