Recipe: Flavoured Salts

FLAVOURED SALTS

Giving away food gifts at Christmas is always a nice touch... something personal that you've taken the time to make. So often they are sweet ideas, but these salts are a perfect savoury option... great for any foodie!

Ingredients

Citrus Salt

  • 1 lemon
  • 1 large handful of sea salt

Porcini Salt

  • 1 handful of dried porcini
  • 1 large handful of sea salt

Matcha Tea Salt

  • 1 tbsp matcha powder
  • 1 large handful of sea salt

Pink Spiced Salt

  • 2 tbsp pink peppercorns
  • 2 star anise
  • 1 cinnamon stick
  • 1 large handful of sea salt
Citrus salt

Step 1

Citrus Salt

Peel off the skin from a lemon, orange and lime (trying to avoid too much pith) and dry in an oven at 100 degrees C for an hour or two. Blitz in a spice grinder to a fine dust, then add a generous handful of sea salt and blitz briefly again. Package in a small glass jar to label and wrap.

Porcini Salt

Porcini Salt

Blitz a handful of porcini mushrooms up to a fine dust in a spice grinder then add in an equal amount of sea salt and give it one final blitz. Store in an airtight container and wrap as you prefer.

Matcha Tea Salt

Matcha Tea Salt

Blitz a large handful of sea salt with the matcha powder in a spice grinder for literally just a second. Transfer to a glass jar to label and wrap.

Pink Spiced Salt

Pink Spiced Salt

Blitz the pink peppercorns, star anise and cinnamon stick up to a fine powder in a spice grinder. Add in the sea salty and give it one more blitz. Stash in a jar and give away to your foodie friends.
