Recipe: Cranberry & Orange Pork Stuffing
This festive flavour combo for your stuffing is a sure fire winner. Make plenty of them because we know that people will be coming back for seconds!
- 1 small onion
- 50 g fresh breadcrumbs
- 50 g dried cranberries
- 2 sprigs of fresh thyme
- 1 medium orange
- 1 egg yolk
- 4 rashers of streaky smoked bacon
- 500 g pork mince
- 2 tbsp cranberry sauce
Preheat An Oven
Preheat the oven to 200ºC.
Chop And Mix
Chop the onions as finely as possible and add them to a bowl with the breadcrumbs.
Chop the cranberries and thyme, then zest the orange. Add them all into the bowl, along with the egg yolk.
Dice the smoked bacon and add it to the bowl with the pork mince. Combine everything well and season with salt and pepper, this is much easier with clean hands rather than a spoon.
Roll And Bake
Roll the pork mixture into large balls about 3cm across and place them onto a baking tray lined with baking paper.
Bake the stuffing balls for 8-10 minutes until just cooked, then remove from the oven.
Dilute the cranberry sauce with 1 tbsp of hot water, then brush it over the stuffing balls.
Return the stuffing to the oven for another 5 minutes, until the cranberry glaze becomes caramelised and sticky.
Transfer the stuffing to a serving dish and serve at the table.
