Crab Cake Sliders

- ½ cup breadcrumbs
- 1 spring onion
- 1 cup crab meat
- burger buns
- slider buns
- 1 egg
- 2 tbsp mayonnaise
- 1 tbsp creole seasoning
Make The Patties
Mix crabmeat, breadcrumbs, mayonnaise and spices in large bowl. Crack in the egg and mix until combined
Form into 6-8 medium patties if you’re making sliders
into 4 large patties if you want to make a burger.
Cook The Patties
Put the patties on a lined baking sheet, cover with plastic wrap and refrigerate for at least 30 minutes to firm up.
Heat some vegetable oil in a pan on medium low heat. Gently slide patties into the pan.
Don’t worry too much if it seems like the cakes are going to fall apart. It will stay together once you brown one side and will then be firm enough to be flipped.
Fry until both sides are golden and drain on absorbent papers.
To assemble the sliders, place some lettuce leaves on the bottom half of bun. the crab cake goes on next, then spoon on some coleslaw and top with the other half of the bun
Serve with a side of fries (or salad, of course).
