Combine all ingredients in a food processor and combine until very smooth.
Transfer the mixture to a tray or tin, lined with clingfilm. Freeze for at least 1 hour, then remove from the baking tray.
Cut into 48 bite sized pieces and place in an airtight container before returning to the freezer.
Leave out of the freezer for a minute or so just before you want a treat. Decorate with chopped pistachio and gold leaf. Makes 48 pieces.
