Recipe: Broccoli Mornay

This is essentially our twist on a cauliflower cheese! Not only do we throw a little blue cheese into the sauce but the addition of pumpkin seeds on top as it grills gives this a real nutty flavour!
Ingredients
- 400 ml whole milk
- 1 tbsp salted butter
- 50 g blue cheese
- 1 tbsp plain flour
- 1 handful pumpkin seeds
- 1 handful grated cheddar
- 1 head broccoli
- 2 bay leaves

Step 1
Preheat The Grill & Water
Heat a large pan of salted water to the boil and preheat a grill to a medium heat.

Step 2
Cook The Broccoli
Cut the broccoli into chunky florets, getting rid of most of the stalk. Boil the broccoli for 3 minutes then drain and allow to steam dry a little.

Step 3
Make The Sauce
Melt the butter in a pan and stir in the flour to form a paste. Pour the milk into the flour paste a bit at a time, stirring as you go, making sure it is boiling again before pouring in the next batch, adding the bay leaves to infuse flavor as soon as it’s no longer a paste.

Step 4
Add The Cheese
Let the sauce simmer for a few minutes, then melt in the grated cheddar and blue cheese.

Step 5
Add It All To A Dish
Arrange the broccoli pieces in an oven-proof serving tray/dish. Pour the cheese sauce over the broccoli, try to cover as much broccoli as possible. Finish with a scattering of pumpkin seeds.

Step 6
Grill And Serve
Grill to heat the broccoli through again and to bubble and brown the cheese sauce. Serve with fish, grilled meats or good quality sausages. Serves 2 as a side serving
