Recipe: CUCUMBER STRIP SALAD
Using this smart but stupidly simple method of cutting cucumber it will give your salads a completely different dimension. The lime, soy, sugar and chilli dressing provides a zing and it works beautifully with crab cakes, teriyaki chicken skewers or alongside sushi.
- 1 handful radishes
- 1 tsp sesame oil
- 2 tbsp soy sauce
- 1 small red chilli
- 1 lime
- 1 tbsp caster sugar
- 1 bunch fresh coriander
- 1 cucumber
MAKE CUCUMBER STRIPS
Run a vegetable peeler along the length of the cucumber from all sides to create strips, avoid going too close to the centre where the flesh doesn’t have as much structure.
MAKE THE DRESSING
Slice radishes by hand as finely as possible, chop the coriander and de-seed then dice the chilli.
Squeeze the juice of the lime into a small bowl and add the soy sauce, caster sugar, sesame oil, coriander and chilli.
Whisk for a moment or two so that the sugar dissolves.
MIX & SERVE
Toss the cucumber in the dressing and serve alongside some crab cakes, sesame prawn toast, fragrant chicken skewers or even added to the a spread of salads at a bbq.
