Bacon Cheese Fries

If you're on a clean/ healthy eating regime, Cheat Day is the promised land of every week. Whether your eating is flexible or strict there's always a way of making great "cheat food" without actually cheating. This one's based off of a recipe by the BBQ Pit Boys on YouTube. You can do this in a kettle BBQ or in your oven at home.
- 1 tsp Chilli Flakes
- 16 Rashers Smoked Turkey Bacon
- 1 tsp Medium Chilli Powder
- 1 tsp Paprika
- 3 Spring Onions (Chopped)
- 300 g Reducced Fat Cheddar
- 900 g Low Fat Oven Chips
- 1 tsp Cayenne Pepper
- 1 Tin Sweetcorn (Drained)
- 3 Jalapeños (Chopped with seed and pith removed)
Fries And Bacon Prep
Prep your veg and preheat your oven to 200 Degrees Celsius. While that's going on lay out your bacon on a tray and spread your chips over a pizza tray (you can put baking paper on the tray as well to save on washing up). Place both trays in the oven and cook for 30 mins (flipping the bacon at 5 minutes and taking it out at 10). Shred the bacon and wait until the chips/ fries are golden and crispy.
Spread your first layer of cheese and bake the fries for another 5 mins at 200 Degrees Celsius. When the cheese has melted add a layer if bacon, jalapeños, sweetcorn, spring onion, and spice. Top off with cheese and bake again until the cheese is melted.
Layer 2 And Finish
Ad your final layer and serve with a choice of condiments. I really like using BBQ Sauce.
