Recipe: Tomato And Mozzarella Salad
This is a fancy looking dish and whether you enjoy it as a light lunch or the perfect start to a meal it tastes as good as it looks. The simplicity of it is part of it's beauty... the same tomato sauce as a base finished with freshly ripped basil leaves is spooned over creamy torn mozzarella and garnished with a crispy shard of baked parma ham.
- ½ packet Parma ham
- 2 cloves garlic
- 2 balls mozzarella
- 1 onion
- 1 bunch fresh basil
- 1 shot olive oil
- 6 tomatoes
Make The Sauce
Chop the tomatoes roughly, dice the onion and crush the garlic.
Chuck them all into a large pan then add a 100ml of water and a drizzle of olive oil along with a pinch of salt and pepper.
Cook the tomatoes down into a sauce consistency, it’ll take about 25 minutes.
Preheat The Oven
Preheat the oven to 180ºC.
Crisp Up The Parma Ham
Lay slices of parma ham on a baking tray and bake for 6-8 minutes until starting to go crispy.
Allow to cook to crisp up completely.
Lay Out Mozzarella
Drain the mozzarella and tear.
Arrange the mozzarella onto a plate, slightly overlapping.
Add Basil & Serve
Rip the basil leaves finely and stir through the warm sauce right at the end of cooking.
Spoon the hot sauce over the cheese and garnish with a shard of crispy ham.
