This recipe will make around 12-16 amazing soft and crispy cookies that you can personalise to your own taste!

Ingredients

  • 1 tsp Vannila Extract
  • ½ tsp Salt
  • 100 g Brown Sugar
  • 225 g Self Raising Flour
  • 200 g Chocolate
  • 125 g Butter
  • 1 Egg
  • 125 g Caster Sugar

Step 1

Mixing

Preheat oven to 180 Degrees Celsius. Combine butter and sugar in a bowl. Mix until the colour has turned lighter in colour and looks fluffier in appearance.

Step 2

The Eggs

Add the eggs and vanilla to the mixture. Combine thoroughly, adding some flour if you need to.

Step 3

The Dry Ingredients.

Here is where you can decide if you want a chocolate or vanilla biscuit. If you want a chocolate cookies, omit 30g of the flour and add 30g of cocoa powder instead. If you want to make vanilla cookies then just add all if the flour. Also don't forget to add the salt! Fully combine until you form a dough.

Step 4

The Dough

Take pieces of the dough and roll them into balls. If you want larger cookies make bigger balls (around 40g of dough). For Smaller cookies use about 20g per ball. Place the balls of dough onto a baking tray lined with parchment paper. Squish the dough down until it is about 0.75cm thick. (Leave enough space between them as they will spread). I would say about 3 balls of dough per tray should be enough (2 if you are making larger cookies). Then place chunks of chocolate on top of the dough.

Bake!

Place the trays of cookie dough into the oven, and leave to bake for 7 minutes. They should be slightly golden once done. Leave to cool on the baking tray for 5 minutes (this ensures they have time to garden before being moved), and then move them onto a cooling rack so they can cool completely. Then ENJOY!
