Recipe: Mini Meringue Drops
These dainty little treat are seriously simple to make... just a few ingredients and they look great on a platter as they are or crumbled over ice cream. As Ben suggests... they look like Unicorn teardrops!?! :S
- 3 egg whites
- 150 g caster sugar
- 0.5 lemon
- 1 drop red food colouring
Whisk The Egg Whites
In a clean bowl, and with the help of mixer if you have one, whisk up the egg whites until you have soft peaks.
Pour in the sugar and continue to whisk until stiff glossy peaks are reached and the sugar has dissolved into the whites.
Add Lemon Juice
squeeze in the lemon juice, taking care to avoid any pips.
Spoon Into Piping Bag
brush the inside of a piping bag with the red food gel.
spoon the meringue into the piping bag and snip of the end.
pipe small blobs onto a baking paper lined tray so that they peak at the top.
bake in a preheated oven at 125ºC for 1 hour until crisp on the outside but still slightly gooey inside.
Cool And Serve
allow to cool and serve scattered on a platter with chopped chocolate, pistachios and dried cranberries.
