Recipe: Peach Fool In A Mug


This is a backup... A contingency, yet often ends up being the star of the show! When you need to throw a dessert together for friends at a moments notice... then this is the one. Making use of a tin of fruit, some biscuits, cordial and simple fool mixture it takes moments but looks stunning.


  • 400 g peach slices in juice
  • 1 shot elderflower cordial
  • 4 tbsp natural yoghurt
  • 4 tbsp full fat crème fraîche
  • 1 tbsp icing sugar
  • 2-3 fresh mint leaves
  • 1 handful amaretto biscuits
  • 1 fresh ripe peach
blitz the peaches

Step 1

Blitz The Peaches

Open and drain the peaches. Blitz them to a purée with a shot of elderflower cordial.

Whisk Together

Whisk the yoghurt, crème fraîche and icing sugar together in a bowl.

Slice The Mint

Slice the mint leaves as finely as possible and mix into the yoghurt.

Crush some amaretto biscuits into the bottom of a glass mug.

Spoon in a little of the peach.

cover with yoghurt

Cover With Yoghurt

Cover that with a layer of the sweetened mint yoghurt.

Repeat with more biscuit, peach and yoghurt… finishing with a final sprinkle of crushed up biscuits.

De-stone and slice the peach, using the slices to garnish the mug. Serves 2
