With just 5 ingredients (one of which is air) we are pretty sure this is one of the simplest recipes ever... yet everybody is so scared about the phantom soufflé. By baking it in a mug it feels like it brings it back down to our level! ;)
Preheat the oven to 220°C.
Cut the passion fruit in half and remove the pulp with a teaspoon. Strain the pulp through a sieve, massaging the pips with the back of a spoon.
Grease the inside of two mugs with the butter and sprinkle with a little sugar.
Beat the sugar and egg yolk with the passion fruit juice until pale and creamy.
Whisk the egg whites in a separate bowl until the mixture reaches soft peaks.
Fold the egg whites into the passion mixture in two batches.
Spoon the passion fruit seeds into the base of the mugs. Divide the mixture between two mugs.
Bake for 8 minutes until puffed up and golden. Serves 2
