Recipe: Clementine And Lemon Curd

If any of your friends or family are into their baking then a jar of personalised clementine and lemon curd is just the sort of thing they'd love. Wrapped up and labelled nicely it makes a great homemade food gift... with so many potential uses.
Ingredients
- 200 g caster sugar
- 1 lemon zest
- 125 ml clementine juice
- 4 whole eggs
- 2 egg yolks
- 100 g butter
- 2 clementines zest
- 2 tbsp lemon juice
Step 1
Prep
Preheat an oven to 140°C. Wash your presentation jars in hot soapy water and dry thoroughly, then place into the oven to sterilise for 30 minutes.
Step 2
Make The Mix
Beat the eggs, extra egg yolks, sugar and zest of both the clementines and lemon into a large heatproof bowl. Cube the butter and add to the mixture along with all the juice.
Step 3
Heat & Distribute
Place the bowl over a pan of simmering water and heat until the mixture thickens, making sure you stir continually. Pour the hot curd into the sterilised jars and seal the lid.
Step 4
Decorate & Share!
Decorate and personalise the jars with labels and ribbons and give away as gifts. These are best stored in the fridge for up to 3 weeks. Makes 3 small jars (Recipe courtesy of Asda Magazine)
