Strudel is one of the first things that comes to mind when we think of a warming winter pudding. We've stuck figs and blackberries into ours but you could really use any fruit combination you want!
Slice 4 of the figs into eighths and chuck them into a bowl with the blackberries. Toss the fruit with the sugar, half of the hazelnuts, brandy and port. Set aside for an hour.
Preheat the oven to 200ºC. Grease a baking tray and stick it in the oven to heat up.
Combine the flour, eggs, water and butter into a sticky dough. Work the dough on a clean surface until it becomes smooth and doesn't stick. roll the pastry as thinly as possible. Stretch the pastry until it is almost see-through.
Brush the melted butter over the pastry and sprinkle over the demerara sugar. Spoon the fruit filling in a line down one side of the pastry. Roll the pastry up around the filling and carefully transfer it to the hot baking tray.
Transfer to your serving platter and dust with icing sugar. Serve the strudel with a generous helping of whipped cream or crème fraîche and the remaining 2 figs sliced on the side. Serves 6
