White Dandelion Soup

A seldom used veggie. More on the blog, link in bio. Serves 2
- 200 g white dandelion
- 2 g shallots
- 1 g spring onion
- 1 g clove of garlic
- 1 tbsp semolina
- 1 tbsp olive oil
- 1 g salt and pepper
- 450 ml chicken stock
- 2 tbsp creme fraiche
- 1 tbsp Caciocavalo Podolico cheese
- 1 tbsp parsley
Chop And Grate
Grate the cheese and set it aside. Chop onions and garlic and parsley
Chop off the last third of the veg and wash the rest very good. Cut it into 2 inch pieces
Use A Medium Size Pot
Heat up the oil and start onions and garlic and saute for 3 min, add the dandelion and give it 2 more min. season. Fill up with chicken stock and add the semolina, cook for 5 min. Cut off the heat and stir in the creme fraiche and the cheese and serve with parsley
