Community Recipe: Veggie Taco Salad

Fresh Pico, Vegan Bacon made Chorizo Style, and Home Made Nutritional Yeast. If you’re Vegan, you need this in your life.

Ingredients

  • 1 Green Chilli Pepper (Diced and Deseeded)
  • 1 Red Onion (Diced)
  • 1 tsp Paprika
  • 1 Avocado (Sliced)
  • 1 Green Pepper (Diced)
  • 6 Tomatoes (Diced)
  • 1 Cucumber (Diced)
  • 1 Can Dry Active Yeast
  • 6 Rashers Soy Bacon
  • 3 Cloves Garlic (Diced)
  • 1 Red Chilli (Diced and Deseeded)
  • 1 Can Sweetcorn
  • 1 Can Kidney Beans
  • 1 tsp Onion Granules
  • 1 tsp Chilli Powder
  • Mixed Lettuce Leaves
  • 1 tsp Cayenne Pepper
  • 2 Soft Corn Tortillas
  • 1 tsp Garlic Granules

Ok. I know Quorn isn’t Vegan (hindsight is 20/20), but Soy Bacon is, so grab that and make sure it’s Defrosted before you dice it. Prep your veggies and let them chill.

Mix your Tomato, Onion, Green Pepper, Green Chilli, Sweetcorn, Half of your Garlic, and Coriander before seasoning with Salt, Pepper and Lime Juice.

Make Chorizo!

It’s not exactly Chorizo but it has all the flavours from the spices and that’s good enough. Fry off Vegan Bacon in a pan and add in your Garlic until everything is caramelised. Add in your Red Chilli, Garlic, Paprika, Chilli Powder, and Cayenne Pepper. Stir through. Season with Salt and Pepper.

Make Nutritional Yeast!

Nutritional yeast costs a fortune as a cheese substitute in sauces. Therefore it’s a lot easier to make your own for cheaper. Add Dry Active Yeast to a hot pan and toast until the grains are a darker golden brown. For added flavour add in Garlic and Onion Granules. Season with Salt and Pepper.

Make Tortilla Chips!

Make Tortilla Chips!

Spread out your Sliced Tortilla. Spray with a little oil and place under a hot grill/ broiler for 1-2 minutes on each side.

Serve!

Serve your Salad as a bed of Lettuce, Warmed Kidney Beans (heat in a microwave for about a minute) and topped with Bacon, Diced Cucumber, Yeast, Pico, Avocado and your Tortilla Chips. Give this recipe a go and let me know how you get on!
