Recipe: Morning Glory Muffins
How do you ensure you start the day with a BANG? By tucking into a homemade muffin! This recipe will make you 12 delicious spiced apple & carrot muffins packed full of energy and the good stuff. They're the perfect grab and go snack and are great served warm or cold.
- 320 g wholemeal flour
- 60 g pistachio nuts, ground
- 130 g soft light brown sugar
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp cinnamon powder
- 1/2 tsp salt
- 100 ml coconut oil (liquid)
- 3 large eggs
- 3 carrots, topped, tailed and washed
- 100 g Granny Smith apples, cored
- 100 g crushed pineapple
- 35 g dried cranberries
- 35 g sunflower seeds
- 50 g demerara sugar
Preheat The Oven
Preheat the oven to 180ºC.
Line a muffin tin with 12 paper cases.
Start The Muffin Mix
Grate the carrots and apples using the grating disc of the food processor.
Add the flour, ground pistachios, sugar, bicarb of soda, baking powder, spices and salt to the mixing bowl of a stand mixer.
Stir with the K-Beater to combine everything.
Finish The Muffin Mix
Add the oil and eggs, then carrot, apple and pineapple along with cranberries and sunflower seeds and mix to combine.
Scoop the muffin batter into the paper cases (using an ice cream scoop makes that easy!) filling them about 2/3rds of the way up.
Finish, Bake And Serve
Scatter the demerara sugar over the batter, then place them in the oven to bake for 25 minutes.
Leave to cool before eating.
*15 seconds in a microwave on subsequent days brings them back to life nicely!
