BAKED SWEET POTATO WITH CURRY REFRIED BEANS.

Take away your the quark garnish and this is a completely vegan recipe. I borrowed elements from Mike’s Sweet Potato recipe for the Ultimate Baked Potato Battle and gave it a fusion food reimagining of the Student Classic of Jacket and Beans. Ave it.

Ingredients

  • 2 Handfuls Spinach
  • ½ Pack Creamed Coconut
  • 1 Spring Onion (Diced)
  • 1 tsp Soy Sauce
  • 1 Can Butter Beans
  • 1 tsp Rice Wine Vinegar
  • 5 Medium Sized Sweet Potaotes
  • 1 Can Chickpeas/ Garbanzo Beans
  • 1 tsp Curry Paste

Cover the outside of your potato skins with oil, salt and a little pepper. Pre-heat an oven to 200 degrees Celsius and while that’s warming; cover your sweet potatoes in tinfoil. Place into oven and bake for an hour and 15 minutes.

These beans to go on the jacket are meant to be refried and curied. So add both cans of Beans to pan over a high heat with a shot of oil, your Spring Onion, your Curry Paste, Creamed Coconut, Vinegar and Soy. Season with Pepper and fry off. Add a little Water to really help those beans break down before adding your Spinach in at the last possible moment to wilt down.

Split your potatoes open, fork the insides to break up, before seasoning with Salt, Pepper and Oil before putting under a hot grill/ broiler to get the insides to crisp slightly.

Serve your Potato with a good portion of your Beans, garnished with Spring Onion, and Quark it you so desire. This recipe was really simple. All it took was a little time to wait for the Sweet Potato to cook. I meal prepped these for the whole week and they kept the entire time. 10/10. Would recommend as a Vegan Lunch.
