Community Recipe: Jamie's Blt Croque Madame

My BLT croque madame might look like a mess, but it's a beautiful, delicious mess. Creamy, crunchy and devilishly moreish. Ahoy treat day. This one's for you.


  • 1 ea onion
  • 1 stick celery
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tbsp tomato puree
  • 1 kg plum tomatoes
  • 1 tbsp tabasco sauce
  • 1/2 tsp cayenne pepper
  • 1 tsp allspice
  • 50 ml white wine vinegar
  • 50 g caster sugar
  • 400 ml whole milk
  • 2 ea bay leaves
  • 1 sprig thyme
  • 1 pinch nutmeg
  • 25 g flour
  • 25 g unsalted butter
  • 100 g gruyere
  • 1 tbsp dijon mustard
  • 12 rashers smoked streaky bacon
  • 6 ea thick slices brioche
  • 1 ea baby gem lettuce
  • 2 tbsp oil
  • 2 ea eggs
Make the tomato sauce

Step 1

Make The Tomato Sauce

Peel and dice the onion. Dice the celery and mince the garlic. Pour the oil into a saucepan and add the onion, celery and garlic. Cook over a medium heat for 15 minutes to caramelise the onion. Add the tomato purée, cook out for a minute. Dice the tomatoes and throw them into the pan with the tabasco, cayenne and allspice. Simmer for an hour. Pour the vinegar and caster sugar into a small saucepan and simmer for 5 minutes, until slightly syrupy, before pouring it into the tomato sauce. Transfer the sauce to a blender and blitz to a very smooth sauce, then season to taste.

In a small saucepan bring the milk to the boil with the bay leaves, thyme and nutmeg. Melt the butter in a medium sized saucepan. Whisk in the flour and cook for a minute. Remove the bay leaves and thyme from the milk and slowly pour it into the flour, whisking constantly. Stop when you have the desired white sauce consistency. Grate in the gruyere and let it melt in, then add the mustard.

Preheat the oven to 200ºC. Line a baking tray with greaseproof paper and lay out the bacon over the tray. Cook the bacon in the oven for 12-15 minutes. Take 3 slices of bread per sandwich. Spread the white sauce over the inside of the top and bottom bread slices. Layer the bacon generously onto the bottom slice and spoon over the ketchup. Place the lettuce on top. Spread the sauce over both sides of each middle slice and place it onto the lettuce, then add more bacon, ketchup and lettuce followed by the top slice, sauce side down. Repeat with a second sandwich.

Preheat the grill to high. Heat a frying pan over a high heat and add the sandwiches. Cook for a few minutes on each side until the bread is toasted, then transfer the sandwiches to a baking tray. Spread a little more sauce over the top of each sandwich, then grill for a minute until golden and bubbling.

Add the eggs and serve!

Add the oil to a frying pan over a high heat. Crack the eggs into the frying pan and let them bubble. Spoon the hot oil over the egg for a minute, until the white is fully cooked and the yolk is still soft. Place the eggs on top of the sandwiches and serve. Serves 2
