Jamie's Deep Fried Cookie Dough Ice Cream Cookie Sandwich

I made this recipe for the ice cream sandwich battle. It's not a sandwich but there are cookies and ice cream involved.
- 220 g plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 200 g caster sugar
- 125 g unsalted butter
- 1 tsp vanilla paste
- 1 ea egg
- 150 g dark chocolate chips
- 600 ml double cream
- 397 g condensed milk
- 200 g panko breadcrumbs
- 1 bowl plain flour
- 2 ea eggs
Make The Cookies
Preheat an oven to 175ºC.
Mix all the dry ingredients for the cookies together in a bowl.
Pour the wet ingredients and the chocolate chips into the dry and stir to combine completely into a dough.
Take half the dough and spoon tablespoon sized blobs onto a non-stick baking tray. Bake for 10-12 minutes, then allow to cool for 5 minutes on the tray.
Transfer to a wire rack to cool completely.
Make The Ice Cream
Whip the cream lightly until it forms soft peaks.
Stir through the condensed milk.
Roll the remaining cookie dough into small balls and fold them through the ice cream mix.
Pour into a shallow container and freeze for a couple of hours.
Leave the ice cream out of the freezer to soften for 10 minutes before using a ring cutter to cut the ice cream into 10cm discs. Place the discs onto a tray lined with greaseproof paper and return to the freezer to freeze solid.
Blitz the cookies into a crumb and toss with the panko breadcrumbs
Working quickly, coat the frozen ice cream discs in flour, egg and the cookie crumb, then return to the egg and coat in a second layer of breadcrumbs. Return each disc to the freezer as you do one at a time.
Fry And Serve
Preheat the fryer to 190ºC.
Fry the ice cream sandwiches for a minute or 2, until the crumb is golden brown and crisp.
Makes 6-8 ice cream cookies
