Recipe: Serrano Ham Croquettes

SERRANO HAM CROQUETTES

The cheesiest croquettes we've ever seen! The flavour profile of the manchego cheese and serrano ham is banging. The real winner of the recipe however is using panko breadcrumbs to deep fry your delicious mix. Revolutionary. Whack these out at you next Spanish feast. P.S. DON'T forget to leave plenty of time to chill the mixture right down before you roll and fry your mixture.

Ingredients

For The Filling

  • 75 g leeks
  • 50 g salted butter
  • 50 g smoked ham, finely diced
  • 25 g manchego cheese
  • 50 g serrano ham, small diced

To Coat

  • 2 eggs
  • 200 g panko breadcrumbs
  • 100 g plain flour
Fry the Ham and Leeks

Step 1

Fry The Ham And Leeks

Wash and finely dice the leek. Heat the butter in a medium saucepan, until it starts foaming. Add the leek and the smoked ham and fry gently for 5 minutes, stirring, until the leeks have softened.

Make the Sauce

Add the flour and stir to make a paste. Cook for another few minutes as you stir. Pour in the milk, a little at a time, stirring to fully combine everything into a smooth paste before adding more, until the paste thins out to a glossy sauce.

Add the Cheese and Freeze

Grate or finely chop the cheese and add it to the sauce with the serrano ham. Season with salt and pepper. Cover the sauce with clingfilm, so that it is in contact with the surface of the sauce. Chill for an hour in the freezer, until it firms up into a mix that can be shaped.

Preheat the Oil

Preheat the oil in a fryer or a large, deep saucepan filled 2/3rds with oil to 180ºC. Never leave the oil unattended. Line a tray with kitchen paper.

Make the Croquettes

Beat the eggs in a mixing bowl and tip the breadcrumbs into another mixing bowl. Season both with a little salt and pepper. Use the flour to coat your hands and form the filling mix into balls or short cylinders. Coat the balls in the egg, shake off any excess then roll in the breadcrumbs to coat.

Lower the croquettes into the hot oil and fry for 2-3 minutes, until golden brown all over. Transfer the croquette to the lined tray, then to a plate. Enjoy with a little aioli! Makes 15
