Recipe: Date And Walnut Tea Bread

DATE AND WALNUT TEA BREAD

Serves 8

Ingredients

  • 1 egg
  • 70 g light muscovado sugar
  • 200 g stoned dates (chopped)
  • 25 g walnuts (chopped)
  • 40 g unsalted butter
  • 125 g self raising flour
  • 100 ml hot tea
  • ½ tsp bicarbonate of soda
  • ½ grated rind of lemon

Step 1

Before You Start

Preheat oven to 180'c / 350'F / Gas mark 4

Step 2

Zest the lemon and chop the dates roughly Place dates, bicarbonate of soda and lemon zest in a bowl and add all the hot tea.Leave to soak for 10 minutes until soft.

Step 3

Cream together the butter and sugar until light and fluffy. Then beat in the egg Slowly stir into the date/tea mixture

Step 4

Fold in the flour using a large metal spoon.Chop the walnuts, then fold them in the mixture.

Step 5

Spoon the mixture into cake tins and spread evenly. Bake for 35 to 40 minutes until golden brown Cool for 10 minutes and decorate
