Recipe: Diy Gourmet Granitas
Using a juicer we create some vibrant and nutritious fruit & veg juices which are then combined with simple sugar syrups and frozen. By occasionally scratching your ice with a fork you can achieve a granita effect and enjoy a refreshing summer drink! Flavour number 1 is a delicious tropical mix of pineapple, grapefruit, apple and cucumber. Flavour number 2 is cooling & refreshing, made from lemongrass, ginger, oranges and carrots.
- 250 ml water
- 250 g caster sugar
- 1 grapefruit
- 1 cucumber
- 3 sprigs of fresh mint
- 3 green apples
- 1 medium pineapple
- 8 carrots
- 3 oranges
- 15 g ginger
- 3 stalks of lemongrass
Make A Sugar Syrup
Heat the sugar and water up in a pan until the sugar dissolves, then leave to cool.
Juice Number 1
Peel the pineapple and roughly chunk it up so that it’ll fit into the chute of the juicer and chop the cucumber so that it also fits.
Peel the grapefruit then slice that with the apples into wedges.
Place all of these into the Juicer with the mint and process into a gorgeous green juice.
Add 150ml of the sugar syrup to the juice, transfer to large shallow dish and freeze.
Juice Number 2
Wash out your juicer then place all of the carrots, ginger and lemongrass into the juicer and process to get a very bright orange coloured juice.
Peel the oranges and process those too!
Add 100ml of the sugar syrup to the juice, transfer to a large shallow dish and freeze.
Scratch As They Freeze
Take out of the freezer every 30 minutes and, with a fork or whisk, scratch the iced juice that's forming to give you your granita texture.
Serve in cocktail glasses once slushy and firm as a palate cleanser between courses if you want to be fancy or just as a treat on a summer’s day!
Enough for 10-12 portions of each juice.
