Recipe: Macerated Berries With White Chocolate
Berries have never tasted so good! These macerated berries are the only case we know of where berries can taste smoky, zesty, spicy, and sweet all at the same time. Better yet, they're paired with delicious creamy white chocolate ganache! So delicious.
For The Berries
- 400 g frozen mixed berries
- 50 g caster sugar
- 1 tsp lemon zest
- 1/2 tsp cider vinegar
- 1 pinch cardamom powder
- 1 pinch black pepper
For The Ganache
- 125 ml double cream
- 100 g white chocolate
Macerate The Berries
Tip the frozen berries into a bowl and scatter over the sugar, lemon zest, vinegar, cardamom powder and pepper. Toss and leave for 10 minutes if serving immediately, or covered in the freezer for weeks if you’re planning ahead.
Make The Sauce
Chop the chocolate and transfer it to a bowl.
In a medium saucepan heat the double cream over a medium heat until it comes to a simmer.
Pour the cream over the chocolate and leave for 5 minutes, then stir to combine into a smooth ganache (microwave for 10-20 seconds if the chocolate isn’t quite melted).
Plate And Serve
Pour the chocolate sauce into shallow bowls and pile the berries into the centre of the bowl.
Crumble over a little of the biscuit and serve immediately.
