Recipe: Homemade Butterbeer
Step into Hogsmeade with this brilliant butter beer recipe. It's alcoholic, it's delicious, it slides down your throat like a dream. Complete with a foamy head, it really is the ultimate wizarding experience that you can now concoct at home! Warning: Seriously indulgent.
For The Meringue Head
- 2 large egg whites
- 150 g caster sugar
- 2 tbsp unsalted butter
For The Sweet Ice Mix
- 4 tbsp unsalted butter, melted
- 1/2 tbsp treacle
- 2 tbsp dulce de leche
- 1 pinch sea salt flakes
For The Beer
- 1 bag crushed ice
- 300 ml alcoholic ginger beer
- 600 ml cream soda
- 20 ml amaretto
Make The Meringue Froth
Add the egg whites and caster sugar to a heatproof mixing bowl and whisk over a pan of simmering water (making sure that the bottom of the bowl does not touch the water).
Whisk until the egg whites are warm and the sugar has dissolved so that the mixture is smooth.
Remove the eggs from the heat and whisk using a stand mixer or electric whisk until the meringue is cool and stiff.
Add the butter until it’s all combined and very smooth.
Sweet Ice Mix
Whisk the butter and treacle into the dulce de leche, then stir in the sea salt flakes.
Blitz the sweet dulce de leche mix with some of the crushed ice in a food processor to create a slushie.
Fill 6 beer glasses with the slushie mix and extra crushed ice if necessary.
Pour In The Beer Concoction
In a jug stir together the ginger beer, cream soda and the amaretto, then pour it over the ice in the glasses.
Top the butter beer with your sweet egg whites and serve!
Fills 6 250ml Beer Glasses.
