Bring a pan of water to a boil over a high heat. Carefully lower the eggs into the water and cook for 7 minutes. Remove and run under cold water for a few minutes, then leave them to sit in cold water for another 5 minutes. Peel the eggs and roughly chop them.
Add to a bowl with the mustard, mayo, cayenne and vinegar. Stir well to combine. Season generously with salt and pepper then gently fold in the cress.
