Egg Mayo Sandwich
How to make a perfect egg mayo sandwich? Add some spice because it really brings out the flavour of the filling! You too can give this classic a boost with just a few simple ingredients. It's timeless and simply delicious.
- 4 eggs
- 2 tsp Dijon mustard
- 3 tbsp mayonnaise
- A pinch of cayenne pepper
- 1/2 tsp malt vinegar
- 2 tbsp cress
- 1 tbsp salted butter
Cook The Eggs
Bring a pan of water to a boil over a high heat. Carefully lower the eggs into the water and cook for 7 minutes. Remove and run under cold water for a few minutes, then leave them to sit in cold water for another 5 minutes.
Peel the eggs and roughly chop them.
Make The Egg Mayo
Add to a bowl with the mustard, mayo, cayenne and vinegar. Stir well to combine.
Season generously with salt and pepper then gently fold in the cress.
Construct The Sandwich
Spread the butter over one side of each bread slice. Pile the egg mayo mixture onto the buttered side of two of the slices, then sandwich with the other slices, butter side down.
Slice and enjoy!
