Recipe: Strawberry And Lemon Meringue Pops


These meringue pops make fabulous little homemade gifts. Light, crispy pink & white flavoured meringues with a gooey middle. We've gone for strawberry and lemon flavours. They're so much fun to make and even better to eat. Treat someone lovely- they deserve it!


For The Meringue

  • 3 large fresh egg whites
  • 175 g caster sugar
  • 1 tsp cornflour
  • 1 tsp ground cinnamon
  • 2 drops red food gel (or any colour you prefer)
  • 1 Other edible glitter

For The Icing

  • 100 g icing sugar
  • 2 tbsp water
  • 2 drops lemon flavouring (or any flavouring you prefer)

Preheat the oven to 125ºC.

Whisk the egg whites in a clean bowl until you have soft peaks. Dump in the caster sugar, cornflour and ground cinnamon, then continue whisking until you have stiff glossy peaks. Brush the inside of a piping bag with the food gel. Spoon the meringue into a piping bag fitted with a wide nozzle of your choice!

Pipe little dollops of meringue, about 10cm across, onto a baking tray lined with greaseproof paper. Carefully poke a paper lollipop stick into the bottom of each heart.

Bake in the oven for 1 hour, then switch the oven off and leave the meringue to cool inside.

Decorate and Serve!

Mix the water, flavouring and icing sugar to get a smooth icing. Generously drizzle the icing over the cooled meringue, then scatter over a few pinches of glitter and freeze dried strawberries. Serve! Makes 20 meringue pops
