It's one of SORTEDfood's greatest recipes!

  • 400 g frozen cherries
  • 100 ml creme de cassis
  • 200 g white chocolate
  • 100 ml double cream
  • 42 kit kats
  • 200 g ricotta
  • 200 g cream cheese
  • 200 g fresh cherries
  • 200 g honeycomb bars, roughly crumbled
  • 1 bunch mint

Step 1

Cook The Cherries

Tip the cherries into a small dry saucepan over a medium heat. Cook for 5 minutes, until the cherries begin to release their juices, then add the creme de cassis. Simmer for another 10 minutes. Set aside to cool.

Step 2

Make The Ganache

Chop the white chocolate into small pieces and tip them into a mixing bowl. Heat the double cream in a medium saucepan over a medium-high heat until it’s almost simmering. Pour the cream over the chocolate and leave it to melt for a minute before stirring until the mixture is completely smooth. Scrape the seeds out of the vanilla pod and stir them into the white chocolate mix. Set aside to cool a little.

Step 3

Preheat the oven to 180ºC. Grab a (20x30) baking dish or a small roasting tin. Lay the kit kats out over the bottom of the dish you’re using, covering the whole thing. Pour over some white chocolate mix into the gaps around the kit kats and drizzle some over the kit kats. Do the same thing with the cherry mix then dollop the ricotta and cream cheese around the kit kats.

Step 4

Finish And Bake

Half and pit the cherries. Scatter over the fresh cherries, crushed honeycomb and mint leaves. Add another layer of kit kats and repeat all of the fillings. Add a final layer of kit kats and dot around more of the cheeses, fresh and cooked cherries, mint and honeycomb bars. Bake for 10 minutes, until the cheese begins to brown and the kit kats are just starting to go melty. Cut it into squares of ‘lasagna’ and serve! Serves 6
