Recipe: White Chocolate Raspberry Protein Donuts

WHITE CHOCOLATE RASPBERRY PROTEIN DONUTS

That long winded title says it all! Yikes! Hahha I think these are a perfect VDAY treat- I've had loads of orders for them at the shoppe recently so I thought I'd share!

Ingredients

  • 2 tbsp coconut oil,melted
  • 1 tbsp vanilla bean paste
  • 2 tbsp white chocolate, melted
  • ¼ tsp ground nutmeg
  • 2 tsp baking powder
  • ¼ tsp xanthan gum
  • ½ tsp salt
  • ¼ cup almond flour
  • ½ cup vanilla whey protein
  • ¾ cup almond milk with 1 teaspoon white vinegar to make 'buttermilk'
  • ½ cup frozen raspberries
  • ½ cup organic cane sugar
  • 2 tbsp Greek yogurt (room temp)
  • 2 large eggs, room temp
  • 1¼ cup oat flour
  • ⅓ cup mini white chocolate chips
DRY MIX

Preheat your oven to 365 F and grease HEAVILY at least two donut pans (I'd have 3 greased - mine fit 6 donuts per pan) In a large mixing bowl combine all your dry ingredients except your frozen raspberries which we add last!

In another bowl add all your wet ingredients - your melted oil, melted chocolate, eggs, vanilla, nondairy buttermilk, etc. And whisk together - it's important your items are melted and warm but not TOO hot - we don't want scrambled eggs ;)

Mix your ingredients together until you have a nice cohesive batter. Gently crush the frozen raspberries and stir in JUST until combined: Pour the batter into a large piping bag fitted with a large round nozzle and pipe your donut batter into your pans about 2/3 of the way full.

BAKE AND DECOR-ATE

Bake And Decor-Ate

Bake the donuts for 10-11 minutes or until they spring lightly to the touch. I THWACK my pans onto a cooling rack immediately and let them cool. Decorate however you like - I dip mine in chocolate and sprinkles but they are just gorgeous on their own! Keep in an airtight container for 2-3 days - or freeze! They freeze brilliantly :) Happy baking xoxoxo
