Double Hot Wings

I don't even care what Ben says... These are for me and the people. I'm giving the people what they want. They want hot, hot wings.
- 2 tbsp chilli powder
- 2 tbsp smoked paprika
- 1 tbsp cayenne powder
- 2 tsp garlic powder
- 2 tsp celery salt
- 1 tbsp soft brown sugar
- 24 ea chicken wings
- 50 g buttermilk
- 1 bowl plain flour
- 1-2 l vegetable oil
- 2 tsp cornflour
- 60 ml smoked tabasco sauce
- 1 tbsp Franks hot sauce (or hotter if you dare)
- 1 tbsp butter
- 1 tbsp maple syrup
- 1 clove garlic
- 100 g blue cheese
- 5 ea chives
- 100 g sour cream
- 75 g mayonnaise
- 1 tbsp cider vinegar
- 1 handful celery sticks
Coat The Wings
Mix together the chilli powder, paprika, cayenne, garlic powder, celery salt and brown sugar in a bowl. Move half of it to another bowl and save for later.
Throw the wings into the first bowl along with the buttermilk and coat them really well.
Flour, Fry And Grill
Preheat a large pan of oil to 180ºC. Only fill the pan half full and never leave it unattended.
Tip the flour into a large mixing bowl and season well with salt. Add the wings and coat them in the flour, then carefully drop them into the oil.
Deep fry the wings for 2-3 minutes, until golden brown and crisp.
Remove the wings from the fryer and onto a baking tray.
Scatter over the remaining spice mix and coat the wings well.
Turn the grill on to high and grill on both sides until they’re really crispy and beginning to blacken.
Make The Hot Sauce
Mix the cornflour into a little of the tabasco sauce until it becomes a paste.
In a small saucepan combine the rest of the tabasco, the hot sauce, butter and maple syrup. Heat and add the cornflour paste. Stir until it thickens slightly.
Place the wings into a large bowl and pour over a couple of tablespoons of the hot sauce. Pour the rest into a ramekin for dipping later.
Make The Dip
Pour the sour cream, mayo and vinegar into a food processor. Add half of the blue cheese and blitz to combine.
Crumble in the remaining cheese and chop the chives and add those too.
Serve the wings in a big bucket and drizzle over a little extra sauce. Enjoy with the celery, blue cheese dip and extra hot sauce.
