Recipe: Pepperoni Pancake Pizzas
If you're not a fan of sweet pancakes there's no reason why you can't turn 'em savoury! This pizza pancake recipe brings together pancake batter, pepperoni, cheese and sundried tomatoes. Pancake fun for everyone and a great brunch idea.
- 150 g plain flour
- 1 tsp baking powder
- 2 tbsp caster sugar
- 1 tsp salt
- 2 eggs
- 150 ml milk
- 2 tbsp butter, melted
- 2 tbsp parmesan cheese
- 50 g sun dried tomatoes
- 50 g pepperoni
- 50 g cheddar cheese
Preheat The Grill
Preheat the grill to high.
Prepare The Ingredients
Tip the flour, baking powder, sugar and salt into a large mixing bowl, then crack in the eggs and whisk while slowly pouring in the milk and the melted butter keeping the batter smooth.
Dice the pepperoni and finely chop the sun dried tomatoes.
Heat a large, ovenproof non-stick frying pan over a high heat. Pour the batter into roughly 20cm circles.
After a few minutes, grate over about 2 tablespoons of grated Parmesan over the pancake, then scatter with the pepperoni and tomatoes.
Finish by grating over some cheddar.
Take the frying pan and put it under the grill to finish cooking. The top of the pancakes should cook and the cheese and toppings should be golden and bubbling.
Remove the pancakes from the pan and repeat until you use all of the batter.
Makes 4 pancake pizzas
