Avocado Baked Eggs
We hollow out an avocado and use the remaining flesh, pancetta, jalapenos and eggs to create a beautiful baked surprise. What will you fill yours with?
- 2 avocados
- 1 tbsp jalapeños
- 1 tbsp smoked paprika
- 2 eggs
- 50 g pancetta
- 1 tbsp extra virgin olive oil
- 1 squeeze lime juice
- 20 g feta cheese
Preheat The Oven
Preheat the oven to 180ºC.
Scoop Out The Avocados
Slice across one side of the avocado then scoop out the stone using a teaspoon. Scoop enough flesh out to make room for a egg but keep a little flesh around the skin.
Save the leftover avo flesh.
Finely dice the jalapeños and scatter them into the bottom of the avocados. Sprinkle over a couple of pinches of the smoked paprika then crack in the eggs.
Place the avocados onto a baking tray and put them in the oven to bake for 15-20 minutes.
Cook The Pancetta
Meanwhile heat a small dry frying pan over a medium-high heat.
Add the pancetta and fry for 5 minutes until it’s crisp and golden brown.
Prepare The Remaining Avo
Mash the remaining avocado with the olive oil and lime juice.
Spread the smashed avocado into the middle of the plate and place the baked eggs on top.
Finish And Serve
Scatter over the pancetta, feta, a little extra paprika another squeeze of lime and a drizzle of oil.
Season with salt and pepper and dig in!
