LEVEL UP GUACAMOLE

This is a ridiculously easy but very fancy method of making guacamole. The recipe will give you the freshest tasting dip out there. Serves 2.

PREPARE THE INGREDIENTS

Peel and finely chop the the onion. Deseed and finely dice the red chilli and push them to one corner of your chopping board. Chop the coriander leaves and mix them with the onion and chilli on the board. Grab your avocados, de-stone them and scoop them out of the skin onto the board.

COMBINE AND SERVE

Use a large chef’s knife to roughly chop the avocado, then add half the onion and chilli mix, the olive oil and salt and continue to chop. Tip the remaining onion and chilli mix into the avocado and combine. Taste and season. Serves 2 with tortilla chips.
